Asparagus!
Mund Farm of Rothbury
Great news! We thought last week was it for asparagus but Greg tells us the spears are loving this weather and will be at market this Saturday and possibly next as well. Meanwhile, here’s a great recipe to try. Save a half-cup of that local micro-brew for this one!
Asparagus With Honey Garlic Sauce
1 pound fresh asparagus
1/2 cup Dijon mustard
1/2 cup dark ale or dark beer
1/3 cup honey
1 clove garlic, minced
1/2 teaspoon crushed dried thyme leaves
1/2 teaspoon salt
Add asparagus to boiling, salted water (about 1 inch deep) and cook, covered, for about 2 minutes, or until barely tender. Drain.
Combine remaining ingredients; mix well. Pour over cooked asparagus. Yields 4 servings.
Shady Side of Holland
I will have our certified organic dry beans at Saturday’s market–grown last summer on our farm south of Grand Haven. The special this week is our October Beans, from the cranberry bean family. This week’s special price for a 2-lb. bag is $10.00 (regularly $11.50) and for a 1-lb. bag is $5.50 (regularly $6.00). I will also have a limited amount of Grassfields Farm aged raw milk cheese: Chili Cheese, Dill, Fais Gras, Garlic & Onion, Gouda, and Lamont Cheddar. Grassfields Farms is out of some varieties of cheese right now, so we will have to wait for mid-June for some of the others to come back in stock. shadysidefarmmichigan@gmail.com
