Chickadee Creek Farm of Nunica
We are super excited to finally be bringing our Heritage meats to the market! We will be offering assorted cuts of pork from our Mulefoot hogs and also some cuts of mutton from our Shetland sheep. All our animals are hormone and antibiotic free. They are rotationally grazed and offered a varied diet consisting of natural forage, vegetable scraps, and in the case of the pigs—a mix of non-GMO grains. Many of you have been telling us how you think our eggs taste better than any others you’ve had–we are confident that you will be able to taste the positive effect that a diverse diet has on our meat as well!
Mulefoot hogs have earned the title, “the rarest swine in America”. That’s because 30 years ago they were all but extinct. Thanks to some hard working individuals and organizations they now have their own breed registry and are creeping back from the brink of extinction.
You may wonder, if the pigs are so rare, why would you want to eat them? Well… First of all, these pigs provide some of the best tasting pork you will ever eat–even better than other heritage breeds! It’s juicier, richer in flavor, more succulent, and it is marbled like beef. You will notice a difference before you even open the package, the color of the meat is a rich red, not a pale pinkish white. But the second reason to eat them is because by doing so, you are creating a market for them. You are giving farmers like us the support we need to keep raising them. You are telling us that you care about how your food is raised and that flavor is still important.
Our Shetland sheep are also a heritage breed. We chose them for similar reasons as the mulefoots; because they are hardy, self-sufficient, and they can obtain the majority of their dietary needs from the pasture. We don’t feed our sheep any grain, just some hay in the winter and some organic kelp and mineral salt to supplement the nutrients that aren’t readily available from our soil.
We will be offering cuts of mutton which is the term for the meat from an adult sheep; lamb is technically only “lamb” if it comes from a sheep less than a year old. But because Shetland meat is so mild, there is hardly a noticeable taste difference if any at all. And because it does not have the prestige of being called lamb, mutton is more affordable. We will have stew meat, steaks, leg roasts, and other assorted cuts for sale.
