Little Red Organics Farm of Freesoil
With the happy return of spring greens and lettuce, we find ourselves loading up meals with these simple staples.  Here are some ideas. . .
Grilled Bok Choy (you can substitue Komatsuna here too! – the stems are edible)
Cut larger bok choy in half, leave small plants whole.  Wash thoroughly, shake dry and toss in a bowl with salt and sesame oil.  Grill on low until the larger stems are tender.  Hit with an acid like rice wine vinegar or lime juice if desired.
Salad on the Farm
At the moment our leaf lettuces are looking awesome!  We combine one head of romaine with a lighter lettuce like New Red Fire or Red Sails for some varying texture.  After adding whatever else we have on-hand (cucumbers and basil at the moment) we hit it with EVO, lime juice, and sea salt (poached egg?  ham?!).  Boom.  Salad.

Bloom Ferments of Grand Rapids
Bloom will be at the market with bottles of ginger, jasmine, and lavender hibiscus kombucha! I will also have sign up sheets for upcoming fermentation workshops, and handmade terrariums with live succulents.

Shady Side Farm of Holland
Busy week! Lots of tillage, corn planting, haying, and a new baby calf… I’ll make time to come to market this Saturday, though. I will have along 16 varieties of our certified organic dry beans. Have you tried the Painted Lady bean? I like to cook a bunch of them up, and refrigerate them in a mason jar with balsamic vinaigrette (or some other nice dressing)—ready to add to my salad greens at lunchtime. A 1/2 cup serving of cooked beans has as much fiber as FIVE raw apples, and around 7-8 grams of protein.

In addition, I’ll have along our stone ground corn meal, and some wool yarn fresh from the farm. I will also have along aged cheese from Grassfields Farm. The milk used to make this cheese is certified organic raw milk (meaning it is not pasteurized or homogenized).

Please note: My plan for the summer is to attend Sweetwater Market every other Saturday. So when you see me, stock up on enough good food to last for two weeks!
